Egg Fast Day 2 – More Eggs Please

More eggs and more eggs for day 2 of the egg fat fast challenge.  I actually started this morning out at 215.2 which was up 0.2 from my starting weight yesterday.  My weight can fluctuate several pounds from one day to another so I'm not overly concerned.

I had my first meal at noon again today and I had an egg salad.

My Egg Salad

  • 6 hard boiled eggs diced
  • 6 Tablespoons Homemade Mayo
  • 2 Tablespoons Pepperoncini Peppers Diced
  • 2 teaspoons spicy mustard

Mix everything together.  Salt and Pepper to taste.  I also had 1 serving of Whisp Cheddar Cheese Crisps.  This was excellent and this was also the first time I've ever had the cheese crisps.  Those things are addictive!

For supper I had a Buffalo Omelette.  ​ This was my first time ever making this too and it was excellent.  For this I basically made 3 eggs omelette style fried in 2 Tablespoons of butter.  While this was cooking, I softened 1 ounce of cream cheese in the microwave and added 1 Tablespoon of Blue Cheese Crumbles and 2 teaspoons of Frank's Red Hot.

I spread this cheese mixture over the eggs when they were done.  I really like the cheese mixture and I could see this being great on a burger when I'm done with the egg fasting.

Overall, today went really well and I wasn't hungry for supper like Day 1 but I went ahead and ate just to keep my calories up and not go into too big of a deficit.  My numbers for the day were as follows.​  1320 total calories, 7 grams of carbs (2%), 105 grams of fat (73%), and 78 grams of protein (25%).  Solid numbers again today.

On to day 3 of the egg fat fast!​
